7 Delicious Snacks from Super Snack Saturday

Today’s post is a collection of 7 delicious snacks from Super Snack Saturday on July 27th. These snacks are truly wonderful and so easy to make! I love eating snacks every day but I want to make sure that these snacks are healthy too. All of these recipes are a great way to make sure you and your family have a wide variety of wonderful snack recipes to choose from.

Crispy kale chips are a fantastic snack that is packed with nutrients! Sonali from The Foodie Physician has created a simple and tasty recipe that will quickly become one of your favorite snacks. I like making kale chips in my dehydrator and adding different spices and flavors to change up the taste. Some of my favorite toppings for kale chips are nutritional yeast, chipotle powder, curry powder,  cinnamon, raw cacao, coconut sugar, and black pepper.

Muffins are a great portable snack that you can enjoy for breakfast or anytime during the day. Emilie from The Clever Carrot has come up with a fantastic gluten-free zucchini muffin that would be great topped with homemade jam and served with a nice cup of tea. I would use coconut sugar instead of brown sugar in the recipe because it’s a much healthier sweetener.

If you don’t eat dairy feel free to leave the cheese out of the recipe or substitute a nice cashew nut or seed cheese.

  3. I’m definitely gonna try the zucchini muffins. Hopefully the recipe also works with other flours, because not only am I allergic to wheat, I’m also allergic to rice. So gluten-free is also not really an option. Ah well, maybe corn-flour or buckwheat will also do the trick.
    And since it’s very hot for an unussual period (for the Netherlands that is) I’m also gonni give the popsicles a try. Store-bought once almost always make me more thirsty.

    even though we are in the middle of winter here I do enjoy reading your recipes.

    My mother believed in Kale needing frost before she would use it, why would that be?

    I love the way you added your notes to the recipe and giving extra suggestions.
    The brussel sprouts snacks look so yummy, what a great idea.

    Would barley flour work instead of whole wheat flour? I have replaced whole wheat with coconut flour but it seems more crumbly???

    • Hi Yorinda, I never heard of kale needing frost before using it. I have not made this recipe with barley flour before but you can always visit the blog who made the recipe and ask them if it might work instead of whole wheat flour. It should be ok. 🙂

  6. I’m a huge fan of roasted brussel sprouts. Wouldn’t eat them – but husband loved them – so started roasting them and what a difference – I’m now as big a fan as he is. We get them on the stalk at Trader Joes during the fall/winter and roast them right on the stalk – amazing.

    Got to try your clever snack using them + the Kale chips which I’m also crazy about.

  8. I like the Popsicle recipe, the 3 ingredient peanut butter cookie, and the brussel sprout one. I rarely get to eat brussel sprouts and my kid hasn’t warmed up to them yet. It might make for an interesting party finger dish.
